This flavour combination though unusual, at the same time pulls nostalgic ties from the classic apple pie. The entremet is stacked with a brown butter shortcrust, brown butter vanilla sponge and a zesty green apple compote, all of them blanketed with a beautiful caramel mousse. This one in our opinion, provides a perfect classic but not so classic take on flavours and textures all in one pretty little package.
